Kyoto Cooking Circle monthly recipe
‘Freeze-Dried Tofu with egg, Fried Dried Tofu Salad,
Dried Tofu French Toast'

Today, we’ll learn how to cook “Koya Tofu” (freeze-dried Tofu). It was named after an ascetic monk who stayed at Mt. Koya, a world heritage site, and often ate freeze-dried tofu.
It is said that people in the Tohoku area also ate it but called it “凍み豆腐”(Komi Tofu, Freezing Tofu in English). So it’s assumed that many people had freeze-dried tofu all over Japan. It is thought to have originated in China.
Freeze-dried Tofu is called “meat from the field” because it is made from soybeans and contains a higher nutritional value than normal tofu.
