‘Freeze-Dried Tofu with egg, Fried Dried Tofu Salad,
Dried Tofu French Toast'

 Today, we’ll learn how to cook “Koya Tofu” (freeze-dried Tofu). It was named after an ascetic monk who stayed at Mt. Koya, a world heritage site, and often ate freeze-dried tofu.
It is said that people in the Tohoku area also ate it but called it “凍み豆腐”(Komi Tofu, Freezing Tofu in English).So it’s assumed that many people had freeze-dried tofu all over Japan. It is thought to have originated in China.
Freeze-dried Tofu is called “meat from the field” because it is made from soybeans and contains a higher nutritional value than normal tofu.



■ Koya Tofu no Tamago togi
(Simmered Freeze-Dried Tofu with Egg) 
Ingredients (4 servings)
2 blocks of freeze-dried tofu, 1 cup frozen vegetables (green peas, corn, carrots etc.)
Ingredients A – 300cc Dashi, 2 Tbsp sweet sake, 1 Tbsp light say sauce, 1/2 Tbsp sugar, a pinch of salt
3 eggs
Directions:
1.Soak freeze-dried tofu in water for 30 minutes.
2.Squeeze out the water from the Tofu and cut into 2 cm cubes.
3.Combine ingredients A in a pan. Add the Tofu and Simmer for 5 minutes at the low heat.
4.Add the frozen vegetables and cook until boiling. Beat the eggs in a bowl and whip well. Pour in the eggs and cover the pan with the lid when the eggs become soft.
■Fried Freeze-Dried Tofu Salad
Ingredients (for 4 servings):
Your choice of vegetables (lettuce, carrot, cherry tomato, cucumber)
☆Onion dressing
( 2-3 Tbsp grated onion, 3 Tbsp say sauce, 3 Tbsp vinegar, 3 Tbsp vegetable oil)
☆Fried freeze-Dried Tofu
4 Freeze-dried Tofu,
Dressing:
1 Tbsp soy sauce, sweet sake, cooking sake, 200cc water, ginger juice
Batter: (same amount flour and starch)
cooking oil
Directions:
1.Soak the freeze-dried tofu in the dressing for 10 minutes.
2.Gently squeeze out the water from the Freeze-Dried Tofu.
3.Combine the batter ingredients in a bowl. Add the tofu. Fry with cooking oil at 180℃ temperature.
4.Slice the vegetables and serve with the tofu. Add the onion dressing.
■Freeze-Dried Tofu style French Toast
Ingredients (for 4 servings):
2 blocks of freeze-dried tofu, 1 egg, 50cc milk, 1 Tbsp sugar, butter, vanilla essence
Cinnamon powder, granulated sugar, honey
Directions:
1.Soak the tofu in water until it becomes soft.
Cut into slices. (See the picture.)
2.Combine the egg, sugar, milk, and vanilla essence in a bowl, and mix well.
3.Soak the tofu in water until it becomes soft and squeeze out from the excess water. Soak in the mixture for 10 minutes or until it becomes soft.
4.Sauté the tofu with butter on both sides over medium heat.
5.Serve the tofu and sprinkle the granulated sugar and cinnamon powder on top.
The vanilla essence eliminates the smell freeze-dried tofu.
■Freeze-Dried Tofu Pound Cake
Ingredients (for 4 servings):
5 Freeze-dried Tofu, 1tsp baking powder,
100g sugar, 100g butter, 4 eggs, vanilla essence,
2 Tbsp, liquor of your choice (Brandy, cognac, or triple sec will be just fine.)
Directions:
1.Put butter in a bowl and stir well. Add sugar little by little and beat until it becomes creamy.
2.Add the eggs and mix well. Add vanilla essence.
3.Grate the tofu and combine with baking powder through flour bolter. Add the mixture and mix well. Bake for 30 minutes at 170℃.
4.Cool the cake down, pour on a little liquor, and cover with plastic wrap until moist.
