The white slender Somen noodle is a typical seasonal tradition of the Japanese summer dishes, and we feel cool in it.
Let's try "Semen noodle with the Ginger pork saute". We can make it easily and immediately, so it's good menu for getting over the hot summer.

■ Somen Tsuyu (Somen dipping sauce) (4 servings):
2cups water (400cc), 1/2cup soy sauce (100cc), 1/2cup mirin (100cc),
10g dried bonito flakes
  1. Place water, soy sauce, mirin, and dried bonito flakes in a pot at once, and bring to boil over middle heat.
  2. Keep boiling over low heat for 1min.
  3. Remove from heat and cool, then strain.
*Notes :
This sauce can be preserved for 1week in the fridge. It's very convenient to use for dipping sauce, for example pouring on Deep-fried Tofu, boiled vegetables. Also arranging Japanese dressing by adding vinegar.
■ How to boil Somen
Ingredients: (4 servings)
6 bunches (300g) Somen noodles, boiling water
  1. Place Somen noodles in ample boiling water (1,000ml water per 100g Somen), and stir with chopsticks.
  2. When about to boil over, add a small amount of cold water. Boil for 2mins, again.
  3. Drain and rinse in cold water, squeezing and turning the noodles with one hand.
    Drain again.
*Refer to the directions on the package about the amount of water or boiling time.
■ Somen with Ginger Pork Sautee
Ingredients: (4 servings)
200g thinly sliced pork, 1/2onion , 1 tomato , 2 green onion (Japanese leek)

Ginger dressing: 4Tbsp of somen sauce, 20g fresh ginger),Boiled Somen
  1. Cut the pork slices into 2-3pieces. Marinate pork in 3Tbsp of Somen sauce and grated ginger.
  2. Cut onion into thin slices, soak in water and drain. Chop green onion finely. Cut tomato into1/16.
  3. Heat oil in a frying pan, saute pork till brown on both sides. Add somen sauce and coat with the sauce.
  4. Place Somen in bowls, arrange pork, sliced onion, tomato, green onion on top. Pour Somen sauce over.
■ Omelet with Somen
Ingredients: (4 servings)
2 eggs, chopped green onion (Japanese leek), dried shrimps, 1 slice of cheese,
Somen(cut roughly), 2Tbsp somen sauce
  1. Rinse Somen in water and cut roughly.
  2. Beat 2 eggs well. Add green onion, dried shrimp, cheese, Somen, and somen sauce.
  3. Heat oil in a frying pan, and fry both sides well.

 *Deep -fried Somen snack: Deep-fried boiled Somen and sprinkle with cheese-powder.
 *Miso-soup with somen.
 *Chawan-mushi (Savory Custard Cup) with Somen.
 *Fried Somen. : Sauteed with meat, ham, vegetables like Yakisoba.
