Chawan-mushi (Savory Egg Custard)
Ingredients (4 servings):
3 eggs, 500ml dash broth with bonito fish, 2/3 tsp. salt, 1/2 tsp. soy sauce
kamaboko (boiled fish paste), mushrooms, shrimp, chicken, mitsuba and etc.
Directions:
  1. Combine the dashi broth, salt, soy sauce and beaten and strained eggs.

  2. Cook over high heat for 2 min. , the low heat for 10 or 12 min.
    Let stand for 5 min., covered.

※ If using a large pot instead of steamer, bring the water to a boil. Then place custard bowls and steam. The custard is done when a toothpick inserted into a draws out clear liquid. When steamed over high heat, the custard swells up and loses its smoothness. Steam for 2 or 3 min. over high heat, then lower heat and continue steaming for 10 or 12 min.
※ It may contain any combination of the following ingredients:
shrimp, chicken, fish mushrooms, ginko nuts, tofu, udon and green vegetables
