Buri no teriyaki (Yellowtail Teriyaki)
Yellow-tail fish is called Success-fish because of changing the called-name as growth.
Once, Samurai had been changing his name with making a success of his life.
We serve yellowtail-fish after such a custom for children’s success.
(Please refer Red-Rice menu.)
Ingredients (4 servings):
4 Yellowtail fillets, Salt , Vegetable Oil
Teriyaki Sauce: 4 Tbsp Mirin, 4 Tbsp Sake, 5 Tbsp Soy-sauce

Directions:
  1. Sprinkle yellowtail fillets with salt lightly, and let stand for a while.

  2. Wipe the surface before cooking to remove moisture.

  3. Heat the oil in a frying pan, and fry the fillets. Cook first the side of fish that will face up when served. When browned, turn over, cover the pan and fry the other side over a low heat.

  4. Remove the fillets, add all the teriyaki sauce ingredients, and simmer it down slightly.

  5. Return the fillets to the pan and spoon over teriyaki sauce until the fish glazed.
