Ichigo-daifuku (Strawberry Daifuku Sweets)
imageWe would introduce the Japanese sweets. "Ichigo daifuku mochi"(Strawberry rice cake sweets). Please enjoy the taste, the harmony of soft texture!
We hope you'll make it at your home when you find the fresh strawberries at stores.

The special sakura-color (cherry pink color) sushi rice dishes are good for for the spring's festivals, for example, "Hinamatsuri girl's festival", "the cherry blossom viewing", "the celebration of the school entrance and graduation".
This color is the expression of the pleasure of the coming spring.
Let's make the rolled sushi with spring vegetables, the wrapped sushi (ball-shaped sushi).
Clear soup with rape blossoms vegetables & wheat gluten bread is suitable for those spring dishes.

Ingredients (4 servings):

50g Shiratamako(glutinous rice flour), 50g sugar, 90cc water,
4-6 strawberries, 80-120g
koshi-an(sweet red beans paste), Katakuri-starch

Directions:
direction※ To make a strawberry and sweet red beans paste balls.
  1. Divide the sweet red beans paste(koshian paste) in portion about 20g.
    Wash strawberries and remove the calyxes.
    Wrap a strawberry with the divided koshian paste to make a ball.


direction※ To make shiratamako-mochi dough
  1. Put shiratamako rice flour and sugar in a bowl and add water gradually. Microwave them for about 3min.


  2. directionMix the dough quickly until become clear.





  3. directionTransfer the dough to the plate with katakuriko-starch
    Divide the dough into 4-6 equal pieces, make every piece flat to obtain 4-6flat circle (mochi ).





direction※ To make ichigo-daifuku
  1. Put the strawberry-koshian-ball on the flat circle of mochi dough and cover (wrap) it with mochi dough. Make like a sphere around the strawberry and obtain the daifuku-mochi.
